Farmers Casserole
INGREDIENTS :
6 cups frozen shredded hash brown potatoes
2 cups Monterey Jack cheese, shredded
2 cups cooked ham, diced
½ cup green onions, chopped
8 large eggs, beaten
2 (12 oz) cans evaporated milk
½ teaspoon garlic salt
¼ teaspoon freshly ground black pepper

Instructions:
1. Preheat oven to 350°F (if baking immediately).
2. Assemble the casserole:
Lightly grease a 9×13-inch baking dish.
Spread the hash browns evenly in the bottom.
Layer with cheese, diced ham, and green onions.
3. Mix the egg mixture:
In a large bowl, whisk together the eggs, evaporated milk, garlic salt, and pepper.
Pour evenly over the casserole.
4. Bake:
If baking right away: Bake uncovered for 1 hour 15 minutes, or until the center is set.
If refrigerated overnight: Bake uncovered for 1 hour 30 minutes.
5. Cool slightly before serving for best texture.
