4 C. Hot water

¼ C. Swerve confectioners sugar substitute

1-2 tsp. Strawberry flavoring to taste

2 Tbsp. Unflavored gelatin

½ tsp. Vanilla extract

HOW TO MAKE STRAWBERRY PRETZEL SALAD:

Blend the pecans up into a rough meal in a food processor or blender.

Mix the butter, brown sugar substitute, and vanilla extract for the crust with the ground pecans, and press into an even layer in the bottom of a 9×9 baking dish that has been well greased.

In a mixing bowl, beat together the cream cheese and ½ cup of Swerve confectioners sugar substitute until smooth and creamy.

In a separate bowl, beat together the heavy whipping cream and teaspoon of vanilla extract until whipped cream has formed.

Fold the cream cheese mixture into the whipped cream mixture until well combined.

Layer the whipped topping evenly on top of the pecan crust, and place the sliced strawberries in a single layer on the whipped topping.

Place the baking dish into the freezer to set for 30 minutes.

Whisk together the ingredients for the gelatin topping, and pour over the mixture in the baking dish. Place the baking dish into the fridge until the gelatin layer has set.

Ingredients (Serves 6)

For the Meatloaf:

2 lbs chopped meat (beef, or a mix of beef and pork)

4 eggs

1 large onion, finely chopped

2 tablespoons chopped parsley

2 teaspoons salt

½ teaspoon black pepper

⅔ cup oatmeal

1 cup Italian breadcrumbs

1 cup finely shredded carrots

1 cup finely shredded celery

6 tablespoons ketchup

For the Tomato Beef Sauce:

⅓ cup ketchup

1 can (10.5 oz) beef consommé soup

½ teaspoon dried basil

1 tablespoon cornstarch

A few drops Frank’s Red Hot or Tabasco (optional)

Instructions

Step 1: Prepare the Meatloaf

In a large mixing bowl, combine all meatloaf ingredients. Use your hands or a spatula to mix gently but thoroughly—overmixing can make it dense.


Step 2: Shape and Bake

Form the mixture into a loaf and place it in a baking dish or on a parchment-lined baking sheet. Bake at 350°F (175°C) for 1 hour.


Step 3: Make the Sauce

Downeast Maine Pumpkin Bread

 Don’t hate me, but I could take or leave a pumpkin spiced latte. They’re just… not really my thing. Pumpkin bread on the other hand, I am completely and totally smitten with. I could eat a slice for breakfast every morning and not get sick of its soft texture and subtle sweetness. Smear on some butter or cream cheese and I’m in autumnal heaven. While it’s available at just about any bakery this time of year, a good homemade loaf cannot be beat. And this recipe for Downeast Maine Pumpkin Bread is the best of the best. It’s not fussy or fancy, it’s simply the perfect loaf.

Ingredients

1 (15oz) can pumpkin puree

4 eggs

1 cup vegetable oil

2/3 cup water

2 1/2 cups granulated sugar

3 ½ cups all-purpose flour

2 teaspoons baking soda

1 ½ teaspoons salt

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground cloves

1/4 teaspoon ground ginger

1/4 teaspoon cardamom

How to Make Downeast Maine Pumpkin Bread

Preheat oven to 350 degrees F and grease two 9-inch loaf pans.

In a large bowl, mix together the pumpkin, eggs, oil, water, and sugar until fully incorporated.

In another medium-sized bowl, sift together the flour, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and cardamom.

Slowly mix the dry ingredients into the wet ingredients, just until no dry spots remain.

Blueberry Topping:

2 pints fresh blueberries (approx. 4 cups)

1 tbsp water

1½ tbsp cornstarch mixed with 1½ tbsp water

1 tsp lemon zest

½ tsp lemon juice

Crust:

¾ cup butter, melted

2 cups all-purpose flour

1 cup chopped pecans, toasted or un-toasted (toasted gives a little richer and nuttier flavor)

Filling:

2 cups heavy whipping cream

2 cups plus 2 tbsp powdered sugar

16 oz. cream cheese, softened

1 tsp vanilla

How To Make Copycat Magnolia Bakery’s Blueberry Jamboree

First, make the glaze.

Combine 1 pint (approx. 2 cups) blueberries, granulated sugar, brown sugar, and one tablespoon water in a small or medium saucepan over medium heat.

Stir constantly and try to smash or pop some of the blueberries to help bring more liquid to keep sugar from burning.

Once sugar is dissolved and blueberry mixture is starting to boil, pour in the water-cornstarch mixture. Stir constantly while mixture comes back to a boil and thickens slightly, approximately 1 minute.

Remove from heat and add the remaining 1 pint of fresh blueberries, the lemon zest, and lemon juice. Mix well. Then transfer to the fridge to cool. This mixture needs to be completely cool when added to the top of the dessert.

Next, to make the crust, preheat the oven to 325 degrees.

Combine melted butter, flour, and chopped pecans in a medium-sized mixing bowl. Mix until well combined.

Spray a 9×13 baking dish with cooking spray and press the flour-pecan mixture evenly in the bottom of the pan.

Bake at 325 degrees for 15 minutes.

Remove from oven and let cool while you make the filling. Place in the fridge to help it cool faster.

To make the filling, you need 2 medium or large mixing bowls. In the first bowl, whip the heavy whipping cream and the vanilla until it is thick, but not completely whipped into whipped topping.

In the other bowl, whip the softened cream cheese and powdered sugar together.

Combine both mixtures in the larger bowl. Mix for another minute or two or until completely combined.

Spread filling evenly over the completely cooled crust, and then spoon blueberry mixture over the filling by gently using a spoon to evenly cover the entire top of the dessert with the beautiful topping.

Cover and refrigerate until serving.

CRAB RANGOON EGG ROLLS

 Crab Rangoon Egg Rolls are filled with fresh crab meat, cream cheese, and a perfect blend of spices. They are fried to golden perfection and are the ultimate party appetizer.


INGREDIENTS

2 (8 ounce) boxes cream cheese softened

1 –2 tablespoons Worcestershire sauce (see notes)

1 teaspoon garlic powder

1/2 teaspoon onion powder

3 green onions chopped

1/2 lb fresh white cooked crabmeat flaked or diced

8–10 egg roll wrappers

Vegetable oil for frying

How To Make Crab Rangoon Egg Rolls

In a food processor, pulse cream cheese, Worcestershire sauce, garlic powder, onion powder, and green onions several times until mixed. Stir in crab meat.

Lay one egg roll wrapper out with a corner pointing towards you. Place about three rounded tablespoons in the center of each wrapper, making a short horizontal lump. Bring the corner that is closest to you up and over and gently tuck it in. Fold in the sides and roll the wrapper tightly. Use a small amount of water to secure the tip of the wrapper. (If you don’t know how to roll an egg roll, it usually shows on the package with pictures).

Heat oil in a heavy stockpot or saucepan to 375 degrees. Fry them 2-3 at a time (depending on the size of your pan) for 1-2 minutes or until lightly browned. Allow the heat to charge back up in between batches. Place on paper towels to drain. Serve warm.

NOTES

If at all possible, use fresh crab. I used King Crab, which I find to be the best for these. You can also use Snow Crab, Dungeness Crab, Blue Crab, and Stone Crab.

In a pinch, substitute canned or imitation crab meat. If using imitation, be sure to chop it up fine.

Egg roll wrappers can be found in most grocery stores in the refrigerator cases next to the fresh produce.

Soften the cream cheese to room temperature.

Like your crab rangoon a little sweet? Add 1/2 tablespoon of sugar or 1/2 tablespoon of mirin.

Use oil with a high smoking point like vegetable, canola, or peanut.

A candy thermometer attached to the side of the Dutch oven will help you keep your oil at a consistent 375 degrees. When you add the egg rolls, the temperature will drop, so turn it up slightly. When you remove the egg rolls from the oil, the temperature will rise, so turn it down a bit.

 If you’re searching for something a little different than your normal breakfast (but aren’t a morning person like me), you’ve come to the right place! This easy Breakfast Sausage Casserole recipe only can be whipped up in a matter of minutes.

It’s the ideal breakfast for when you have relatives or visitors staying over and need something to feed everyone that doesn’t need a lot of effort or clean up. You may even brown the sausage ahead of time so that all you have to do in the morning is toss everything into the baking dish.


Ingredients:

1 lb ground pork sausage

1 tsp mustard powder

½ tsp kosher salt

4 large eggs, beaten

2 C whole milk

6 slices white bread, toasted and cut into cubes

1 C mild Cheddar cheese, shredded

How To Make Breakfast Sausage Casserole:

Crumble sausage into a medium skillet.

Cook over medium heat until evenly brown; drain.

In a medium bowl, mix together mustard powder, salt, eggs, and milk.

Add the sausage, bread cubes, and cheese, and stir to coat evenly.

Pour into a greased 9×13 inch baking dish.

Cover, and chill in the refrigerator for 8 hours, or overnight.

Preheat the oven to 350 degrees.

Cover, and bake for 45 to 60 minutes.

Uncover, and reduce temperature to 325 degrees.

Bake for an additional 30 minutes, or until set.

Cut and serve.

Ingredients:

1 cup butter

1/2 cup packed brown sugar

1 teaspoon vanilla extract

3 cups quick cooking oats

1 cup semisweet chocolate chips

1/2 cup peanut butter


How To Make No Bake Chocolate Oat Bars:

Grease a 9×9 inch square pan.

Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.

Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.

Old Fashioned Rice Pudding

 Rice pudding has a long history, dating back to ancient Persia. The dish was eventually introduced to Europe, where it gained popularity during the Middle Ages. Over the centuries, rice pudding recipes have evolved, with variations appearing in different regions.


Our recipe for old fashioned rice pudding is simple to follow and uses readily available ingredients. The creamy texture and subtle sweetness make it a perfect dessert for any occasion. Plus, it’s easy to customize with your favorite toppings, such as cinnamon, nutmeg, or a dollop of whipped cream.


Ingredients

1 cup long-grain rice

4 cups milk

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

Pinch of salt

1/4 cup brown sugar

1 tablespoon butter, cut into small pieces

Instructions

Combine ingredients: In a medium saucepan, combine the rice, milk, sugar, egg, vanilla extract, and salt. Stir to combine.

Bring to a boil: Place the saucepan over medium heat and bring the mixture to a boil.

 Old Fashioned Baklava


Old Fashioned Baklava is sure to impress with its luscious flaky honey-soaked layers! Its the perfect dessert for the Holidays! Its Crispy, sweet and is sure to become a favorite dessert!


Ingredients:


1 16 oz. package filo pastry dough, thawed


13 tbsp. melted unsalted butter, divided


4 cups walnuts, chopped finely


1 tsp. cinnamon


1 cup white sugar


2 tbsp. fresh lemon juice


3/4 cup water


1/2 cup pure honey


Instructions:


Trim filo pastry dough to 13 x 9 inches and cover with a damp towel.


Grease a 13 x 9 inch baking dish with 1 tbsp. melted butter and set aside.


Combine sugar, lemon juice, water, and honey in a medium saucepan over medium-high heat and bring to a boil, stirring to dissolve sugar.


Reduce heat to medium-low and let simmer another 4 minutes without stirring.


Remove pan from heat and let cool.


Preheat oven to 325 degrees F.


In a food processor, pulse walnuts until chopped finely.


Combine chopped walnuts and cinnamon in a medium bowl and stir.


Lay 10 filo sheets one at a time into the prepared baking dish, brushing each sheet with melted butter in between layers. Spread 3/4 cup of the walnut mixture onto the filo dough in an even layer.


Lay another 5 sheets of filo dough over top of the walnut mixture, brushing with butter between layers, and top with another 3/4 cup of the walnut mixture.


Repeat until walnut mixture is used up and top with 10 sheets of buttered filo dough.


Brush the top layer with butter. Slice pastry into 1 1/2 inch strips and slice diagonally in both directions to create diamonds.


Bake uncovered for 85 minutes (1 hour 25 minutes) until pastry is golden in color.


Immediately after removing from the oven, drizzle with cooled honey syrup over the pastry in an even layer.


Let cool completely and serve.


Enjoy this classic and delicious Old Fashioned Baklava!

CROCK POT PEPPER STEAK

 I’m going to show you another quick technique to create the Pepper Steak dish in the Instant Pot. Because I didn’t have to hang over the burner while the beef cooked in my Instant Pot, I was able to finish cleaning up the kitchen.


Ingredients

16 oz of beef stew meat.

2 of each bell peppers.

1 vegetable oil.

3 tbsp. Of worcestershire sauce.

1 tsp of minced garlic.

1 can of beef broth.

1 can of stewed tomatoes.

1 season salt.

1 all-purpose flour.

How To Make CROCK POT PEPPER STEAK:

In a large bowl, mix together the flour and season salt then coat the meat in the mixture.

In a skillet, heat the oil, add in the meat, minced garlic, bell peppers (cut into strips) and cook until the meat starts to brown.

Remove the meat and peppers from the skillet to a lined slow cooker leaving the grease behind.

In the skillet where we cooked the meat, add the stewed tomatoes with juice, and 1 can of beef broth to the oil.

Add the flour gradually while stirring until you make a gravy then pour it over the meat in the slow cooker.

Cook cover on low for 8 hours.

Simple, easy and rich of flavors! This slow cooked pepper steak is so delicious. It doesn’t hurt to change our style for time to another! Let me know if you love it.

CREAMY BAKED MAC AND CHEESE

 Creamy Baked mac and cheese. It’s nearly the universal comfort food, and there are SO many variations! In fact, I almost didn’t post this recipe, as there are SOOOO many mac and cheese recipes available, and most people already have their favorite way of making it.


Of course, there’s no “right” way or “wrong” way, so I’m here sharing the way I like to make my mac and cheese (the way my family loves it too).


Ingredients

1 lb. dry elbow macaroni pasta

½ cup salted butter

½ cup all-purpose flour

2 cups milk, at room temperature (I use 2%, but whole milk will also work well)

2 cups half-and-half, at room temperature

1 teaspoon Worcestershire sauce

12 ounces cubed Velveeta cheese, at room temperature

3 cups grated sharp cheddar cheese, divided (at room temperature)

1 teaspoon salt

½ teaspoon dry mustard

¼ teaspoon black pepper

Pinch of nutmeg

How To Make Creamy baked Mac And Cheese

Preheat oven to 325 degrees F. Grease a 9 x 13-inch baking dish and set aside.


In a large pot of salted boiling water, cook pasta for 1 minute less than the package suggestion for al dente (about 8 minutes). Drain and toss with a drizzle of olive oil to prevent sticking.


While the pasta boils, melt butter in a large Dutch oven (about 6-7 quarts) over medium heat. Add flour; cook, whisking constantly, for 1 minute. Very gradually, whisk in the milk and half-and-half. Bring to a boil over medium heat, whisking constantly. Remove from the heat.


Whisk in the Worcestershire sauce. Gradually add all of the Velveeta cheese and half of the cheddar cheese (1 ½ cups). Stir until the cheese is completely melted and smooth. Stir in the salt, dry mustard, pepper and nutmeg. Add cooked, drained pasta and stir to coat.


Transfer to the prepared baking dish. Sprinkle remaining 1 ½ cups of grated cheddar on top. Bake for 15 minutes, or until cheese is melted on top and the sauce is bubbly.


For a crispier, browner top, pop the dish under the broiler for 2-5 minutes.

 WHAT IS SOUTHERN POTATO SALAD:

Southern Potato Salad is a traditional meal that is ideal for potlucks, picnics, and barbecues. It’s creamy, zesty, and ready in about 30 minutes. You can even prepare it a day ahead of time.


This creamy old-fashioned potato salad combines simple ingredients to create vibrant tastes. Lots of creamy mayonnaise, a dash of mustard, and sweet pickles (or relish).


When I think of southern-style food, I instantly think of fried chicken and potato salad. I can’t image going to a potluck meal, a backyard barbecue, or a holiday get-together without a huge dish of potato salad with fried chicken in the center.


Like fried chicken, there are probably as many potato salad recipes as there are picnics or holidays in the south. Each one includes a bit more of this ingredient and a little less of that. But this old-fashioned recipe, with its classic creamy texture, is the greatest and my family’s favorite!


Ingredients

Russet potatoes: 3 pounds (medium)

Mayonnaise: 1 cup

Yellow mustard: 1/4 cup

Apple cider vinegar: 2 teaspoons

Sugar: 2 teaspoons

Onion powder: 1/2 teaspoon

Sweet pickle relish: 1/4 cup

Celery: 1 stalk, chopped

Sweet onion: 1/2, chopped

Hard boiled eggs: 4 (3 chopped and 1 sliced)

How To Make SOUTHERN POTATO SALAD:

1. To start off the recipe, go ahead and cut each potato in half then place in a large pot and cover with 1 inch of water.


2. You’ll want to add 2 teaspoons salt and bring to a simmer and simmer for 20 minutes, or until fork tender all the way through. And please drain well.


3. Once drained, permit cooled and then peel and discard the skins.


4. Then, you’re going to get a large bowl and place in potatoes. Using a knife, cut them into bite-sized pieces.


5. After that, mix together mayonnaise, mustard, vinegar, sugar, and onion powder in a small bowl. Make sure this mixture is poured over potatoes and mix in well.


6. Immediately add relish, celery, onion, and the chopped eggs and mix in well. You can then Add salt and pepper to taste.


7. Alright now, go ahead and top with sliced egg and sprinkle with paprika. And that’s it, cover with plastic wrap and refrigerate for no less than 4 hours.

 Lemon Cream Cheese Pound Cake

Lemon Cream Cheese Pound Cake is moist and soft. It’s simple and sweet, with a buttery taste that melts in your tongue! This is a cake recipe from my mother. This or a Sour Cream Pound Cake was her go-to dessert. For years, I mistakenly believed that was the only Pound Cake recipe available.


Ingredients:

2 cups cake flour ( 8 ounces)

1/2 scant teaspoon salt

8 ounces unsalted butter (if you use salted, omit the salt), room temperature

8 ounces cream cheese, softened

2 cups (14 oz) granulated sugar

6 large eggs, separated – room temperature

2 teaspoons of lemon zest and 1 teaspoon of Boyajian lemon oil or just use 2 tablespoons of lemon zest

1 1/2 teaspoons poppy seeds (optional)

Glaze

1 teaspoon butter

2/3 cup powdered sugar

5-6 teaspoons fresh lemon juice


DIRECTIONS:

Preheat oven to 325 degrees F. Spray a light-colored tube pan or 12 cup (10 inch) Bundt pan with flour-added cooking spray.

Mix together the cake flour and salt. Set aside. If using poppy seeds, add them to the cake flour.


In the bowl of a stand mixer, beat the butter, cream cheese and sugar for a good 5 to 8 minutes, scraping down the sides of the bowl occasionally. Add the egg yolks and beat for another 2 minutes or so. Beat in the lemon zest and lemon oil, scraping down sides of bowl periodically.

Stir, do not beat, in the flour/salt mixture.

In a separate bowl, beat the egg whites until soft peaks form. Fold the beaten egg whites into the cake batter, then pour into the greased pan.

Bake the cake for 60-80 minutes or until a long skewer inserted in center comes out clean (internal temperature 210 F) or with moist crumbs as opposed to batter. Let cool in pan for 10 minutes, then invert and allow cake to cool completely on a rack.

To make the glaze, melt the butter in a large 2 cup microwave-safe measuring cup. Add the powdered sugar and stir to coat. Now add the lemon juice a teaspoon at a time, stirring, until glaze is a good consistency for drizzling. Drizzle over the cake by pouring it straight out of the measuring cup.

NOTES

I like to bake this cake at a slow and low temperature of 325 degrees F. Mine is usually done in a little over an hour, but if you are using a thicker pan or a lighter colored pan (mine’s black), it might take up to 90 minutes. Another tip. If you are using a stand mixer and only have one stand mixer bowl, beat the egg whites first with the clean whisk attachment. Scrape them out of the bowl into another bowl to wait, then proceed with the recipe using the paddle attachment.
